Dandelions are weeds, flowers, healthful and magical. Found all over the world, dandelions are native to Europe and Asia. Most people consider them garden weeds because they are so prolific at producing seeds. A dandelion starts out as a pretty yellow flower on a stalk above a bed of leaves that look like arugula and then turns into a white puffball. Dandelions are edible and healthy. It’s believed that dandelions were brought to America on the Mayflower for their medicinal properties. Whether eating the flowers, stems, leaves or roots or brewing a tea, dandelions contain antioxidants, fiber, vitamins A, C and K, iron, folate, calcium and potassium. Some health benefits include reducing inflammation, controlling blood sugar, lowering cholesterol and blood pressure. If all that wasn’t enough, dandelions symbolize hope, strength and resilience. Children — and those young at heart — make a wish and blow on the puffball spreading the seeds along with the wish into the wind so it can come true. If you’re looking for a sign that the one you love loves you back, blow on a dandelion and if all the seeds are gone in one breath you know it’s so.
